This peasant soup was my lunch recently when I was traveling. Unfortunately I had to ask a lot of questions previous to decide for the dish. This was the only soup without animals involved. The main Ingredients are pumpkin flowers and oyster mushroom. It was a good soup 🥣
🤓 #NerdyFact Pumpkin flowers are very common in Mexico to eat and prepare quesadillas, soups, stuffed flowers [my favorite but need to see how to veganize it]. The flowers are collected in the field (in the past mainly in the milpa) The complete ecosystem of milpa allows to grow different crops in the same space starting with corn plus beans, pumpkin, chili, potato, quelites (which is consider a weed plant but is delicious 🤤) this whole system was and still is the base of our diet.
However with the pass of years, this traditional system ‘as is’ has been modified due to monoculture and the extensive use of pesticides and herbicides.
