What to Look for When Buying Parchment Paper

Type

Parchment paper comes in two different types: bleached and unbleached. The difference is that the bleached is white in color and has been processed with chlorine, while the unbleached is brown and free of chlorine. Whether baking or cooking, either one works; that being said, it is up to you which one you choose to use.

Size

This paper comes in different shapes and sizes, and if you bake or cook a lot, you might decide to have a few of these available in your kitchen. From rolls that let you cut however much paper you need, to precut sheets that fit cake pans or cookie sheets, to ones that have preprinted shapes for laying out cookies, there are plenty of options available to fit your needs and preferences.

Packaging

Ideally, you want the packaging for your parchment to be sturdy yet functional. If the paper comes in a roll, the box should be strong enough to handle sheets being torn off neatly. You'll also want the box to have a tear strip so you can easily cut the sheets without hunting down a pair of scissors. Can you reuse parchment paper?

Yes! Parchment paper can be used again and again—just don't reuse pieces that have gotten messy with things like melted chocolate or food residue, or if the paper has gotten dark and brittle.

Is parchment paper recyclable?

When parchment paper has been bleached, it most likely has a silicone coating to make it nonstick when renders it single-use and non-compostable. Luckily, more unbleached parchment paper has been coming to market, which is fully biodegradable and compostable (though it can't be put into municipal recycling programs).

Is there another name for parchment paper?

Parchment paper is also known as baking paper, or greaseproof paper. Keep in mind, though, that parchment is not the same thing as wax paper (which has a thick coating of wax on it). Wax paper should never be used in place of parchment when baking, as the wax can melt in the oven—and the paper could possibly even catch fire.

What can you use in place of parchment paper?

If you're out of parchment, you can grease your pan with cooking spray or shortening and use aluminum foil or a silicone pad instead. But again, do not use wax paper in lieu of parchment paper, as it's not oven-safe.
